In 2007 Emmanuel Poirmeur chose disruption.
He decided to establish the only vineyard on the Basque Coast, where winegrowing had died out half a century before. Against all advice, he chose to place his vineyard on the Basque Ledge, right on the cliffs that plunge into the Bay of Saint-Jean-de-Luz. This first step was just the start of his innovation.
In order to take maximum advantage of the conditions, he created and filed a patent for a technique for subsea wine vinification and ageing.
